life really is throwing a lot at us right now isn’t it?

maybe we’re at the end of days and the bees are disappearing and the ice is getting thinner and the most we can do is march for our lives but that’s a tough thing to do when holding ourselves upright each and every day is becoming a lot to ask of us.

maybe you’re doing your best. maybe you have a lot on your plate right now but here’s one more thing to add to it: a reminder to be kind to yourself. to take several deep breaths and keep going forward, but not at the cost of the opportunity to take a minute and love our little world. i took a moment recently to make a list of all the very best things that life has to offer me. i’ll keep this close and try to indulge in these things whenever possible. below is my list but i’d love to hear yours!!

  • orange juice with pulp
  • ice water
  • when you wake up in the morning to find your pet snuggled up in the crook of your elbow
  • really just animals in general
  • hayao miyazaki movies
  • good-quality ramen
  • coffee
  • a breakfast worth getting out of bed for
  • bread pudding
  • banana bread
  • really just food in general
  • surrounding yourself with people who bring you peace
  • driving through the mountains with the windows down
  • fruit and vegetables soaked in alcohol??

so yes, here are the refrigerator pickles we deserve. it involves nothing more than making a bloody mary, pouring it over some crunchy little cucumbers, a day’s worth of patience, and you’re ready to live a little. this recipe makes one big jar but can be scaled up or down as you please! friends, enjoy!

bloody mary-nated pickled

Ingredients
  • 2-3 small cucumbers, quartered lengthwise (and halved crosswise if needed)
  • 8 ounces vodka
  • 16 ounces tomato juice
  • 2 ounces lemon juice
  • 2 tsp horseradish
  • 10-12 dashes tobasco sauce
  • 10-12 dashes w
  • worcestershire sauce
  • a pinch of salt and pepper
Instructions
  1. in a large measuring cup, combine all the ingredients except the cucumbers. stir well. drop the cucumbers pieces into a 25-once jar. pour the bloody mary mixture over the cucumbers until they are completely covered. (there will be extra but i don't think i need to tell you what to do with that...). cover the jar and refrigerate for 24 hours before enjoying!
