kale smash, honeyed carrot, and hummus sandwich

Ingredients
  • a handful of kale
  • 7-8 sun-dried tomatoes (the kind that come packed in oil)*
  • extra-virgin olive oil
  • 1 lemon
  • sea salt and black pepper to taste
  • 1 medium carrot, finely sliced
  • a squeeze of honey
  • 2 slices of good sourdough bread
  • 1 tbsp hummus **
  • a handful of lettuce leaves (such as little gem), shredded
Instructions
  1. combine the kale, sun-dried tomatoes, 1 tbsp olive oil, a squeeze of lemon juice, and a pinch of salt and pepper in a food processor. process until a thick paste forms.
  2. cook the carrot in a small pan over medium heat with the honey, a splash of olive oil, and a pinch of pepper until just softened.
  3. toast the bread, then spread one slice thickly with kale smash and the other with hummus. arrange the carrots on top of the hummus, top with lettuce, and sandwich together.
