curry veggie pie

Ingredients
  • 1 small onion
  • 3 medium carrots
  • ½ medium head of cauliflower
  • 1 medium zucchini
  • 1 tbsp olive oil
  • 1½ tsp curry powder
  • ½ tsp cumin
  • ½ tsp turmeric
  • 1 tsp dried basil
  • salt and pepper to taste
  • 2 eggs
  • ¼ cup milk
  • 4 oz. gruyere cheese, grated
  • 1 pie shell (homemade or store-bought***), pre-baked 8 minutes at 350 degrees f
Instructions
  1. preheat the oven to 375 degrees f.
  2. chop the veggies into small pieces. heat the oil in a pan over medium heat. add the onion and saute until brown. add the rest of the veggies, spices, basil, salt, and pepper. saute 5-7 minutes. pour veggies into the pre-baked pie shell.
  3. in a small bowl, whisk together the eggs and milk. pour the mixture into the pie shell. top the pie with cheese and bake 30-40 minutes until the crust is brown and the cheese is brown and bubbly. enjoy!!!!
